Consistency was our biggest struggle at Khao-Che. No two batches of Khowsuey tasted the same—one day, the curry was too thick, the next, too runny. Some days, the chicken turned dry, and our noodles stuck together, ruining the experience. Even our Bohri Lal Chatni would sometimes lose its perfect balance.
We tried taste-testing every batch, making adjustments as we went—but that wasn’t scalable. We needed a system, not guesswork.
That’s when we cracked the code.
We fixed our suppliers—choosing consistent brands for key ingredients like besan, coconut milk powder, and noodles. We introduced a batch control system—no more random portions; every recipe followed precise measurements. Our chicken? No more pre-cooked frozen meat—now, it’s marinated and cooked fresh at the cart for juicy, flavorful bites.
We revamped our Lal Chatni recipe to keep it stable, started prepping every ingredient in small portions for maximum freshness, and ensured quality control checks before any batch left our kitchen.
Today, we’re still refining, still learning, and still pushing for perfection. Because consistency isn’t just about taste—it’s about trust. 🚀
