Ever heard of Simnel cake? This fruity, marzipan-filled delight used to be the star of Mothering Sunday and is often eaten at Easter.
Simnel cake has a rich history dating back to medieval times when it started as a fancy bread made from the whitest, finest flour (hence the name, from Latin; Simila). Over centuries, it evolved into the cake we know today — complete with a hidden marzipan layer and 11 golden marzipan balls on top, representing the 12 disciples (Although, Judas didn’t make the cut).
Sadly, this delicious piece of Easter tradition is disappearing from British bakeries. So, our Head Cook Tracy is keeping the tradition alive for the residents at the home🧁✨
