On this month’s #CookingWithBarbara, we’d like to share one of her favorite comfort dishes, beef stew! This is the perfect wintertime meal. This stew cooks all afternoon and makes the house smell wonderful. Serve with a salad and good bread.
Serves: 8
3 pounds beef round tip roast, no fat 2 medium onions
3 stalks celery
4 carrots
4 medium potatoes
3 tablespoons minute tapioca
1 tablespoon sugar
1 tablespoon salt
1/4 teaspoon black pepper
1/2 teaspoon basil
16 ounces v-8 juice
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
Cut beef into 1 to 2 inch cubes, slice onions, cut carrots and celery into 1 inch lengths, quarter potatoes--put all in a Dutch oven.
Mix together the remaining ingredients and pour over beef, etc.
Cover tightly, cook in a 250 degree oven for 5-6 hours. Do not uncover while cooking.
