There’s nothing like a hearty bowl of beef stew to warm you up! Packed with tender beef, veggies, and a rich broth — perfect for chilly nights or cozy Sundays.
Ingredients:
2 lbs beef chuck, cubed
2 tbsp olive oil
2 onions, chopped
4 cloves garlic, minced
4 carrots, sliced
3 celery stalks, sliced
1 lb baby potatoes, halved
8 oz mushrooms, halved
¼ cup flour
6 cups beef broth
1 cup red wine
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp thyme
2 bay leaves
1 cup frozen peas
Salt, pepper, parsley
Instructions:
1️⃣ Sear the Beef: Pat dry, season, and brown all sides in olive oil. Set aside.
2️⃣ Sauté Veggies: Cook onions, carrots, and celery for 5–7 mins. Add garlic.
3️⃣ Add Flour: Stir for 1 min to thicken.
4️⃣ Deglaze & Mix: Add wine, scrape bits, simmer 2 mins. Add broth, paste, sauce, thyme & bay leaves.
5️⃣ Simmer: Add beef back. Cook on low for 1.5–2 hrs until tender.
6️⃣ Add Potatoes & Mushrooms: Simmer 45–60 mins until soft.
7️⃣ Finish: Stir in peas, season, and garnish with parsley.
