Jeffrey "Jasco" Tome came to Popoyo in 2001 & immediately fell in love with the area, its people and the incredible Surfing & Fishing Nicaragua had to offer. In 2003 he made Nicaragua his second home & became the Chef for Popoyo Surf Lodge. A few years later he moved on to Surfari Charters Chef then Rancho Santanas Executive Chef. Now Jasco’s has his 🔥Restaurant!

Last night, we had the pleasure of dining at Jasco's Restaurant for the first time, and it truly felt like discovering a hidden gem in Central America. From the moment we walked in, the atmosphere was inviting and warm.
The freshness of the ingredients was outstanding—something that’s hard to find. We started with the tuna tataki and vegetable spring rolls, and both dishes were exceptional. The flavors were vibrant and perfectly balanced, setting a high bar for the rest of the meal.
If you're in the area, Jasco's is a must-visit. It’s a bucket list stop that undoubtedly won’t disappoint. Can’t wait to return and try more from their menu!
